Greek Pasta Salad

Ingredients

1 box banza chickpea fusili or penne pasta- cooked ( or your favorite )

1 cup cooked chicken- diced

½ cup cherry tomatoes

Handful of sundried tomatoes chopped

1 cucumber diced

1 can drained chickpeas

1 cup spinach chopped

½ cup zucchini- diced

Greek dressing to taste ( Primal Kitchen is my favorite)

Method

Combine ingredients in bowl. Pour Primal Kitchen Greek Dressing on salad. Stir to combine. Top with optional toppings

Top with ½ cup feta cheese

Optional: add in chopped canned, drained artichokes, peppercinis or olives
