Kid Approved Chunky Monkey Bars

Ingredients

  • 2 cups oatmeal (old-fashioned or quick oats)

  • 1 tsp baking powder

  • 1/3 cup flour (whole wheat or all-purpose)

  • 1/2 cup peanut butter (natural works best)

  • 1/4 cup maple syrup

  • 2 tbsp flaxseed

  • 2/3 cup chocolate chips

  • 2 ripe bananas, mashed

Instructions

  1. Preheat your oven to 350°F . Grease or line an 8x8-inch baking dish with parchment paper.

  2. In a large mixing bowl, combine the oatmeal, baking powder, flour, and flaxseed.

  3. In a separate bowl, stir together the peanut butter, maple syrup, and mashed bananas until smooth.

  4. Pour the wet ingredients into the dry mixture and stir until fully combined.

  5. Fold in the chocolate chips.

  6. Spread the batter evenly into the prepared baking dish.

  7. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.

  8. Allow the bars to cool completely before cutting into squares.
